Simone Bianchi came to coffee sideways.

A Roman, a mixologist, a sommelier’s training. Then the bar at DAK Showroom, and a coffee menu served in three courses.

He is from Rome, and he came into coffee from behind a cocktail bar by way of a sommelier’s training. Spirits first, then wine, then this — which is why he talks about a cup the way other people talk about a bottle.

He took over the bar at DAK Showroom at the end of 2024. He curates the seasonal menu and runs the team.

What he built thereThe DAK Coffee Tasting Experience — three courses, ordered the way a tasting menu is ordered rather than the way a coffee list is.

Third in the Dutch Cup Tasters Championship, and fourth the year before. A palate trained on two other drinks first.
