Leon, the owner of Regent Coffee, was backer #264 in our Kickstarter campaign.
He was interested in Brezi from the beginning, partly because he has always loved traditional Kyoto-style cold brew towers. What surprised him was that Brezi could keep the clean, aromatic character of cold drip coffee, while making the process fully automatic.
Compared with immersion style cold brew, the cup feels cleaner and brighter, with less of the heavy fermented note. It still has body, but more like a smooth honey or syrup like texture.
During our prototype stage, Leon tested Brezi with different coffees, grind sizes, and brew settings. He sent us feedback from a roaster’s point of view, and those notes helped us better understand how Brezi should perform in real daily use.
Over time, Leon continued sharing Brezi-brewed coffee with people in his coffee community, collecting reactions, testing different beans, and narrowing down what works best with the machine.
This bundle came from that process.
